Bourbon Pumpkin Pecan Bread Pudding

Thanksgiving is quickly approaching and food is the only thing on my mind. I’ve searched time and time again for a recipe unique compared to the basic pies for dessert and came up with a delicious alternative. 

Bourbon Pumpkin Pecan Bread Pudding

Ingredients 

Bread Pudding: 

¾ cup pumpkin puree

2 large eggs

1 cup milk

½ cup heavy cream

½ cup packed dark brown sugar

4 Tbsp. melted unsalted butter

1 tsp. ground cinnamon

½ tsp. pure vanilla extract 

½ tsp. kosher salt

¼ tsp. ground ginger

¼ tsp. ground nutmeg

7 cup brioche

½ cup halved pecans 

 

Bourbon Sauce:

1 cup granulated sugar

½ cup heavy cream

1 Tbsp. bourbon 

 

Bread Pudding Directions:

  1. Preheat oven to 350 degrees fahrenheit. Grease an 8×8 baking dish. 
  2. Whisk together pumpkin puree, eggs, milk, heavy cream, brown sugar, butter, cinnamon, vanilla, salt, ginger, and nutmeg. 
  3. Cut brioche into 1 inch cubes
  4. Fold in bread and pecans into mixture made above
  5. Put in baking dish and let set for 30 minutes
  6. Bake for 30-35 minutes

 

Bourbon Sauce Directions: 

  1. Combine sugar and ¼ cup of water in a medium saucepan. Bring to a boil for 12-15 minutes (until sugar is dark)
  2. Remove from heat and add heavy cream and bourbon. Stir until smooth and creamy. 
  3. Top pudding with bourbon sauce and enjoy!
